Kanji for the above。。。 sake -　酒 Nihonshu - 日本酒 futsuu - 普通 Junmai - 純米 Honjouzou - 本醸造 Ginjou - 吟醸 Daiginjou - 大吟醸 shu - 酒 - add to the end of the above kanji for full name. seimaibuai - 精米歩合 - rice polishing ratio Junmaidaiginjoushu - 純米大吟醸酒

Another type, Junmai-shu is made from rice, water, and kouji-kin (mold that turns starch into fermentable sugar). Honjouzou is made like the above but adds small amounts of alcohol. Ginjou-shu is made by polishing the rice to 60% of its original size. Dai-Ginjou-shu is when the rice is polished to 50% or more and I believe sake such as this is the most expensive. The sake with the best reviews is often Junmai Dai-ginjou-shu, which can be pricey.. Often over 50 bucks per 720 mL bottle.
